Cycle of life

“Everything comes full circle tho. When a baby & child a son/daughter needs their mother & usually prefers her especially when sick or downhearted. Then the teen years strike & they strive for independence & distance themselves. But then they become adults & have their own children & mother becomes central again for a time when the children are small. Then the family becomes busy & mother is distanced again due to busy life. When mother dies she is then thought of & idolized for all that she did. It’s beautiful & depressing at the same time. The moral of the story is to try & live in the moment & enjoy every second bc things are always changing & you may miss out if you don’t make the effort.”

Summer Refresher

With summer moving in in earnest my mind turns to sweet southern tea and smoothies! I don’t think there is anything better than a good smoothie ūüôā ¬†I married a wonderful sweet hot man…where was I? Lol Oh yes, my husband is from Hyderabad, India. ¬†With him I expanded my smoothie love to something they call Lassi. It’s a heck of a lot like a smoothie! ¬†There are all different kinds of lassi but right now mangoes are in season & also our whole family is crazy for mangoes, including our dog Jackie ūüôā ¬†So I bring you my recipe for delicious mango lassi! My favorite mangoes are the smallish yellow Champagne mangoes because they are sweet & have very low hair content but you can use whatever ripe mango you have access to and if they are fibery then just run the pulp thru a strainer/food mill before adding to the rest of your ingredients.

Fresh Mango Lassi

  • 2 ripe champagne mangoes
  • 3 heaping tablespoons of sugar
  • Little vanilla
  • 6 heaping tablespoons non-fat yogurt
  • Milk to thin mixture
  • Pit & cut mangoes
  • Blend all ingredients except milk little at a time til mixture is smooth, mixture will be slightly thick
  • Add milk little at a time to consistency of your choice
  • Put in icebox to chill for about 15-20 min. Remove to refrigerator until ready to serve.

Linguini Carbonara

Linguini Carbonara  6/22/13

  • Linguini (half box for 2 w lunch leftovers)
  • Olive oil
  • Bacon (I used Oscar Mayer Turkey Bacon yum!)
  • Mushrooms
  • Peas
  • 2 eggs
  • 1/2 pint cream
  • Freshly grated Parmesan cheese
  • Add pasta to boiling lightly salted water.¬†
  • Mix 2 eggs with whole cream & set aside.¬†¬†
  • When pasta is almost cooked, heat up leftover bacon (or have new bacon cooking when you put the water in for boiling) in small amt of olive oil.¬†
  • Add sliced mushrooms & saut√© until slightly softened.¬†
  • Add peas & saut√© til heated thru.
  • Scoop pasta into bacon pan with spaghetti spoon-pasta should not be completely drained-& toss with bacon, mushiness, peas.
  • Remove pan from heat & pour cream mixture over noodles.
  • Stir constantly so that eggs don’t scramble, until creamy.
  • Add Parmesan cheese & mix in.

I Remember 9/11

I will never forget…watching film footage on a tv that was hurriedly scrambled together in our work conference room. Looking at the horrified faces that surrounded me. Being scared & wondering if it was “the big one”. Hugging & being hugged by other scared shocked co-workers. Watching the video footage in horror as some people chose to jump to their deaths rather than be burned alive when they realized there wouldn’t, couldn’t be a rescue. Going home and being grateful my own loved ones were safe but crying for those whose families were now broken. Being PROUD of my country as people recovered from their shock and started putting our flag wherever they could-in windows, on cars, in storefronts, even on bridges and on the sides of the road in a united show of community and strength. But what I won’t forget more than anything…no matter what their race, creed, religion, gender, sexual preference…for those weeks in the aftermath, we were UNITED-petty differences forgotten, just human beings helping each other heal & find strength. I am PROUD TO BE AN AMERICAN. Proud to have freedom, to have good healthcare, to have good living conditions, and grateful for this good life I’m living because others aren’t so lucky! PLEASE REMEMBER ALL OF OUR FALLEN HEROES, THEIR FAMILIES, AND THOSE WHO MAY YET LOOSE THEIRS, AS YOU GO ABOUT YOUR DAY TODAY.

He creeped in under my skin

He creeped in under my skin
I was looking at the sky
Hoping for the rain
To wash away my sins
He had the line; I couldn’t help but buy
My money was out ; before I found out
How like the wind he’d blow
Through my life & leave me
Wanting all the things I couldn’t have
Fire under my skin; he lit the match
I had to make tears to put it out
My road was too empty & it caused a flood
The thing that attracted him to me
Was what eventually turned him away

I find myself sinking softly into your hearts calm
Full of grace, your eyes shine on me & are delicate
I am jealous of the sun that caresses your face each morn
Knowing that each day I wake, it is veiled from me by miles
Even the birds seem to echo my thoughts, when when when!!??
They torment me as they hop or fly to their freedom together!
I feel you wrapped around me like a cloak of emperors cloth
Loving me, caressing me, & feeding me all of my dreams

Time stopped as our love began
I saw ME in your eyes
Wild & sweet, loving & rich
Your tongue pressed to mine
I slipped into your soul
The sweetest pain I’ve ever felt
A wild thunderstorm stole my day
Boldly swimming thru rich clouds
You made me yours when I made you mine
I can’t cry for those days forever
But I’ll die with your heart on my lips
The hole in your life is me
Nothing left to fight for or with
