Linguini Carbonara

Linguini Carbonara  6/22/13

Ingredients:
  • Linguini (half box for 2 w lunch leftovers)
  • Olive oil
  • Bacon (I used Oscar Mayer Turkey Bacon yum!)
  • Mushrooms
  • Peas
  • 2 eggs
  • 1/2 pint cream
  • Freshly grated Parmesan cheese
Method:
  • Add pasta to boiling lightly salted water. 
  • Mix 2 eggs with whole cream & set aside.  
  • When pasta is almost cooked, heat up leftover bacon (or have new bacon cooking when you put the water in for boiling) in small amt of olive oil. 
  • Add sliced mushrooms & sauté until slightly softened. 
  • Add peas & sauté til heated thru.
  • Scoop pasta into bacon pan with spaghetti spoon-pasta should not be completely drained-& toss with bacon, mushiness, peas.
  • Remove pan from heat & pour cream mixture over noodles.
  • Stir constantly so that eggs don’t scramble, until creamy.
  • Add Parmesan cheese & mix in.
