Linguini Carbonara 6/22/13
Ingredients:
- Linguini (half box for 2 w lunch leftovers)
- Olive oil
- Bacon (I used Oscar Mayer Turkey Bacon yum!)
- Mushrooms
- Peas
- 2 eggs
- 1/2 pint cream
- Freshly grated Parmesan cheese
Method:
- Add pasta to boiling lightly salted water.
- Mix 2 eggs with whole cream & set aside.
- When pasta is almost cooked, heat up leftover bacon (or have new bacon cooking when you put the water in for boiling) in small amt of olive oil.
- Add sliced mushrooms & sauté until slightly softened.
- Add peas & sauté til heated thru.
- Scoop pasta into bacon pan with spaghetti spoon-pasta should not be completely drained-& toss with bacon, mushiness, peas.
- Remove pan from heat & pour cream mixture over noodles.
- Stir constantly so that eggs don’t scramble, until creamy.
- Add Parmesan cheese & mix in.
